Creamy Chicken Scampi

  • 1 ½ pounds Organic Chicken Breast
  • 6 cloves garlic-minced
  • 6 tbs. butter
  • 1 red onion-sliced
  • 1 cup organic chicken broth
  • 1 cup heavy cream
  • ¼ cup Parmesan Cheese-grated
  • 6 oz. mixed bell peppers-sliced
  • 1 tsp. Italian Seasoning
  • ½ tsp. Red Pepper Flakes
  • Salt & Pepper to taste


  1. Lightly season the chicken breast with salt and pepper
  2. In a large pan, over medium-high heat, pan-sear the chicken tenders in 4 tbs. butter. Brown on both sides-remove from pan and set aside. (Chicken will not be fully cooked during this stage.)
  3. Reduce heat to medium, add remaining 2 tbs. butter and garlic to pan. Saute until the butter is browned and the garlic is aromatic-about 2 minutes. Be careful not to burn the garlic as it will taste very bitter.
  4. Add sliced red onion and saute until translucent-about 3-4 minutes.
  5. De-glaze the pan with chicken broth. Using a rubber spatula, scrape off and mix in any bits of chicken and garlic. Over medium heat, reduce heat to low and let simmer 2-3 minutes.
  6. Add heavy cream and simmer on low 5-10 minutes to allow sauce to thicken. Mix in Parmesan Cheese and salt and pepper to taste.
  7. Add peppers to sauce and add chicken back to the pan. Finish cooking chicken in the sauce on low-about 10 minutes.
