Cucumber Salad

  • 2 English cucumbers
  • Grape tomatoes cut in half
  • 1 cup sliced red onion
  • 1 ½ tbs. salt
  • 2 tbs. white wine vinegar
  • ½ tsp powdered or ¼ tsp liquid stevia
  • 2 tbs. fresh dill chopped
  • juice of half a lemon


  1. Slice the cucumbers lengthwise and remove the seeds with a spooner melon ball scooper.
  2. Slice thin
  3. Place onion, tomatoes and cucumbers in a bowl and toss with salt
  4. Place into a colander and allow to drain for 20 minutes
  5. Press out liquid, rinse well with cold water
  6. In a serving bowl, whisk white vinegar and stevia together
  7. Add cucumbers and onion and toss to combine well
  8. Top with fresh dill and lemon
  9. Keep refrigerated until ready to serve
