Quinoa Salad


  • 1 Cup Organic quinoa
  • 2 cups water
  • 1 cup peeled and diced cucumber
  • 1 cup halved cherry tomatoes
  • 1 cup chopped parsley
  • ¼ cup crumbled feta cheese
  • 2 Tbs. chopped kalamata olives 
  • 1 Tbs. chopped mint
  • 1 Tbs. olive oil 
  • 1 Tbs. lemon juice 
  • 1/8 tsp. kosher salt

Directions: 

  1. Prepare quinoa according to instructions.  Let chill.  
  2. Combine quinoa, cucumber, cherry tomatoes, parsley, feta, olives and mint in a large mixing bowl.  
  3. Toss with olive oil, lemon juice and salt.
